  After harvest, all of the grapes grown on our estate undergo a period of drying in the drying loft known locally as the “fruttaio”. The duration of this very delicate step in the production process, varies according to the wine produced. The temperature and humidity in the fruit drying loft are monitored constantly to ensure the aromatic qualities of the grapes remain unchanged during this process which sees the grapes obtain a state of excessive ripeness whilst in the plastic crates.
